I especially loved the final fight between Zuko and Azula. The background music changed the tone entirely; it wasn't rah-rah-big-fight music, it was almost a dirge, and it made the whole fight just desperately sad.
Toph, from the moment of her introduction all the way through the final battles, was made of 100% pure-grade win. I was especially fond of the moment at the end of S2, right after she figures out metalbending and traps her captors, when she declares triumphantly, "I AM THE GREATEST EARTHBENDER IN THE WORLD!" Hard to argue with :)
And so many just great character moments, with all the gaang.
I will say that the Aang/Katara romance was a little squicky for me. The subjective distance between twelve and fifteen is a lot more than three years, and that bothered me.
