Last night, Jet suddenly came up to me and said, "Mom, I really want the breakfast that we had on Christmas morning."

"You want cinnamon rolls?"

"Yeah. Cinnamon rolls. Can I help make them?"

So we spent a chunk of the evening throwing things into the mixer, kneading, and rising. He had to go to bed before the dough had done the first rise, and I shaped as John read Jet his stories.

This morning I had the 7:30 radiology appointment, so I was up at 6:15, showered, and John happened to wake up then anyway, so he put the rolls into the oven. I had enough time to get myself a latte, but then I was off to the hospital.

They did another shot of the left side, and then an ultrasound to be thorough. There's a cyst and a lymph node in an odd place, both are entirely benign, but both made the mammogram denser in that area than they'd expected. So no problems. Yay! Thanks, [livejournal.com profile] rmd, you were entirely correct. I'm glad my radiologists are that thorough.

By the time I was done with all that, I had ten minutes until the beginning of my boss's offsite. So I called John to bring me a couple of cinnamon rolls to work, and then headed right to work instead of home.

It's been interesting. The cinnamon rolls are very comforting, in the midst of this.

Glad to hear everything was okay. And yes, cinnamon rolls are wonderous comfort food. Sounds like they came at the right time. (Hmm, I need to make cinnamon rolls again, now that I have an oven again.)

Would you mind posting the recipe again? I had a hankering for them during a cold snap, but couldn't find it in your archives.

1 tsp instant yeast
1 c warm water
1/4 c sugar
1/2 tsp salt
2 Tbs melted butter
1 egg
1 cup whole wheat flour
2-2 1/2 cup bread flour

put everything in the bread maker on 'dough'. When it's done

roll out (10x20 short edge towards you) spread 1 Tbs melted butter on
than sprinkle
1/4 cup brown sugar
1/4 c sugar
2 tsp freshly ground cinnamon
on top. Roll cut into 12 pieces into a 9x13 pan.

let rise overnight w/ foil cover (plastic sweated)

375 for 25-30 minutes (more like 25)

I have also lined the bottom of the pan with

1/3 cup butter, melted
1/2 cup brown sugar
1 tablespoon corn syrup
2/3 to 1 cup pecan halves

Before laying down the rolls, and flipping it after letting it cool a little to have perfect sticky caramel buns.

Let them cool until the sugar is a nearly crisp coating to make for easier eating.

This time around I actually used stone-ground whole wheat flour and King Arthur's "Unbleached bread flour", which was very nice, indeed. I only add enough flour to make a somewhat sticky dough, as that makes for a more tender roll. And, this time, I didn't use the bread machine. I just used the stand mixer to mix everything but the bread flour together, first, and then gradually added enough bread flour to make the sticky dough. I let the machine knead it for about five minutes to bring all the dough together.
