Noodle Soup
May. 23rd, 2002 01:52 pmThere is nothing that feels as good when I have a head cold as a big bowl of steaming hot ramen. I used the Penzey's beef broth (no MSG), with a splash of fish sauce, mirin, and sesame oil for the broth. Added just the cooked noodles from a package of Top Ramen. I also added a double handful of spinach, a thinly sliced scallion, and a ripped up slice of... pastrami. Hee. It was all I had for thin lunch meats.
It was yummy.
So Jet's sleeping problems seem to actually be a combination of a head cold, which I am now experiencing and I can tell you it really sucks to not be able to breath, and a bit of teething, and a big chunk of separation anxiety. They say that between one and two there's usually some period of really intense anxiety.
candle_light's commentary helped out in that we moved one of our futons into Jet's room. I turned on the air cleaner and vacuumed the hell out of the mattress and then covered it up with sheets and blankets and stuff and now Jet sleeps on a queen-sized futon, sometimes with John or I with him until he's good and asleep. He's sleep much better since, and when he gets up it's usually a matter of minutes to get him back to sleep. It helped knowing that he had an actual cold, too, as Dimatapp worked much better than Ambesol. Poor guy. We had to do a little experimenting before we hit on the real thing.
It kind of helped that I got his cold, as then we *knew* it was a cold. It kind of sucks to have his cold as... well... I now have a cold. Ugh. Though Jet's been great today and taken a good, long nap. I got a good, long nap, too. Yay! And I might just sleep until he wakes up again.

This *isn't* the first cold Jet's gotten nor it is the first cold I've gotten from him. It's kind of inevitable, how much contact Jet and I have that we share colds. Plus, given that my body makes antibodies when it comes into contact, Jet gets those antibodies to help his body figure out how to make them through my milk. So it's how it's supposed to be.
Plus when he does get a cold I've already had, he recovers much more quickly even when I don't get sick by that mechanism. That's pretty cool.
And he's *well* worth a few colds

Date: 2002-05-24 10:14 am (UTC)This was at a place called Pho Saigon, in Beaverton Oregon. It no longer exists. The owner's son was involved in an alleged gang-related brawl at his high-school, and ended up with a brain injury, and the owner devoted his time and energy to helping the young man recover to a point. Because of this, some other family members took over the kitchen and the quality suffered.
Anyway, our current absolute favorite place to go is Pho Hung, which is, mercilessly, across the street from Things From Another World, a comic shop. Since I've been RPing on a few online comics-themed muxen, this has renewed my interest, somewhat, in comics.
Not too much though. There's still a bit too much crepulosity in ink masquerading as comics.
But Exiles is wonderful.

Penny reminded me recently to ask about take-out Pho. Turns out they'll package the soup broth in separate containers from the meat and noodles, you take it home, make the soup very hot, and pour it onto the other ingredients, add the fresh vegetables and thai basil, and it's almost as heavenly as when you get it delivered from their kitchen.
We tried to make the broth at home. I have two pitchers in the fridge, congealed gelatinous beef broth that we made with onions roasted with cloves, star anise, cinnamon, ginger, and peppercorns, and ox tails. That's how we achieved the flavor, as it's simply not reasonable at home to get humongous amounts of beef bones, roast them, boil them once to take off the foam, discard the resulting broth, and then boil them for ten hours in fresh filtered water with the other roasted things. It's close, but only close. Heavier, less refined, and lacks the elegant, almost perfumed essence that you get from the real stuff.
We also need to find the right kind of rice noodle.
Faux Pho isn't the real broth, it's only an approximation. But still quite good. I suppose I'd better get out the soup pot and boil the broth again to make sure there's nothing living in it, before freezing it.

Date: 2002-05-24 08:51 pm (UTC)I used to roast the bones and toast the spices and aromatics and do all the skimming and everything in a 10 gallon pot, and I used to pack it up in quart Zip-locs and pulled 'em out during the winter. But it was, reasonably, not supposed to be winter any more after 90 degree weather a few months back and it being nearly memorial day. I do think about buying pho broth from the local pho shops.
But it snowed today and then was 60+ in the afternoon. Hee
